Ingredients

For this recipe you will need the following: 

  •  
  •   1 lb. Pizza dough (let the dough
  •   sit at room temperature for about 30 min. Before using.)
  •  
  •  
  •   ½ cup olive oil.
  •  
  •  
  •   2 large boneless, skinless
  •   chicken breasts (to be cut in half to make four thin slices of chicken.)
  •  
  •  
  •   Kosher salt and pepper.
  •  
  •  
  •   2 eggs.
  •  
  •  
  •   2 tbsp of milk.
  •  
  •  
  •   ½ cup of flour.
  •  
  •  
  •   3 cups Italian seasoned breadcrumbs.
  •  
  •  
  •   1 cup of vegetable oil.
  •  
  •  
  •   ½ cup marinara sauce (additional
  •   sauce for serving, if desired.)
  •  
  •  
  •   6 slices of mozzarella.
  •  
  •  
  •   ½ cup grated parmesan.
  •  
  •  
  •   8 cloves of garlic, minced.
  •  
  •  
  •   3 tbsp butter.
  •  
  •  
  •   2 tbsp chopped parsley (fresh.)
  •  

How to prepare

Now that you have all of your ingredients set aside, it is time to create these delicious sandwiches.

 

  • To begin, preheat the oven
  • to 400F. While the oven heats, you can line a baking sheet with parchment paper and set it aside for now.

  • Cut your pizza dough into
  • 3 equal pieces (make sure to use a smooth surface for this, you can even sprinkle flour on the surface to prevent dough from sticking.) Roll these slices into 1.5 to 2 foot long ropes, then tie each rope into a figure eight knot and place on the parchment paper-lined
  • sheet. Brush these knots with olive oil and cover them with plastic wrap and let them rest for about 15-20 minutes.

  • Bake knots (about 20-25 minutes,)
  • then let them cool.

  • While the dough cools, season
  • the chicken slices. In a small bowl, combine eggs and milk. In separate bowls, prepare your flour and breadcrumbs. Dip the chicken slices into each bowl (flour, eggs, breadcrumbs), then let rest.

  • Heat vegetable oil in a skillet
  • at medium-high heat. Once to temp, cook the chicken until it is browned (3-5 minutes per side). You can place cooked chicken on a paper towel-lined plate in order to absorb some of the extra oil.

  • Slice your bread knots in
  • half. Spoon marinara sauce onto the bottom half of the knots, then place a slice of chicken on top of the sauce. Top chicken with more sauce, then add two slices of mozzarella and sprinkle with parmesan. Cover with the top half of the knot and place back in
  • the oven for 5 minutes.

  • Make garlic oil: Combine garlic,
  • olive oil and butter in a bowl. Loosely cover bowl and microwave for 30-45 seconds. Stir, and microwave again (until butter is melted). Mix in parsley.

  • Brush your sandwiches with
  • the garlic mixture (be liberal with this.) Serve with warmed marinara sauce.
